How many of us at one time or another have had or are now having acid indigestion? And some bicarb fixed us up, right?

Sixty million of us experience heartburn once a month. And from an energy perspective once is enough to demonstrate significant Pitta imbalance. 

Often associated with this imbalance is diarrhea, hemorrhoids or both.

So what is described here is a physiologic imbalance of to much of the hot quality created by the nutritional choices. Too much inflammation.

The Six Tastes and Completeness of the Meal

Today I was eating lunch and wasn't enjoying it very much. Somehow this dish that I had had in the past many times just wasn't as pleasurable.

Near the end of the meal I began thinking about the tastes that were present. Let's see there's sweet, sour, yes, mmmm, where was the salty taste?

I knew that pungent, bitter and astringent were there but aha! the salty taste I had omitted.

So I pulled out my PV churan and sprinkled it on the remaining portion of my meal. Viola! It was quite amazing what happened to me physically. Oh my gosh, I felt pumped!

Well, the point of the story is that for foods to be satisfying, we should have all six tastes.

And if one of them is missing, we begin rooting around looking for something to satisfy us. That usually is the sweet taste, like chocolate but it is usually the bitter taste. But today it was salty for me.

The food that provides all six tastes is milk-that's why babies can thrive on mother's milk for so long.

We see that the GI tract to be healthy and functioning in a balanced way(sound familiar?) energetically needs to have all tastes. Energetically the levels of digestion in the GI tract follow sweet(mouth), sour(stomach), salty(bile), pungent(small bowel), bitter(small bowel), and astringent(colon).

So if we short change one or more of these tastes, energetically we don't amplify and support that portion of the bowel and then functionally over time it lanquishes.

Consciousness Creates Health

That consciousness creates health is not philosophical musing. It is a fact. Consciousness is awareness and as we have talked about in other bloggings awareness is the key, the absolute key to health. If I am not aware that I am sick and have dis-ease then how can I expect to take steps to heal what ails me.

If we elect to take in foods that cause acid indigestion and take OTC pills for it then in my mind we have decided to deny that there is a problem in inner space. We have elected a state of no awareness.

If we see large distended varicose veins on our lower extremities and decide to ignore them we have chosen nonawareness or an unconscious state.

So it's the small things that grab our attention that are screaming for attention before they get bigger.

And I know we as consumers believe this as well because I see patients in the office on a regular basis who have that same intuitive sense.

They know that there is more to their mindbodies than molecules. Yet the present matter science nutritional format would have us believe differently.

The understanding of the consciousness based model begins with understanding that we are, yes a collection of molecules, but we are also energy fields who are conscious. The ancient traditional energy sciences such as Ayurveda have given us models by which to follow.

Is this to let go of the current matter science model information? Of course not because there has been so much information derived from our understanding of the molecular aspects of the mindbody.

But there is room for both models because they both have a lot to offer. It will take time for the matter scientists to understand this marriage but it is bound to happen because the current medical consumer of health care will demand it.

The Dryness of the Astringent Taste

The qualities of the astringent vibrational frequency pattern are dry, slow/dull, rough, dense, hard, and sticky/cloudy. It balances the sharp/penetrating and liquid nature of Pitta and oily, slimy/smooth, and sticky/cloudy nature of Kapha but its dry and rough promotes imbalance for Vata. When taken in its pure form, it creates a dry, choking sensation in the throat. Most raw vegetables are astringent as well as unripe banana, pomegranate, chickpeas (hummus), green beans, yellow split peas, okra, goldenseal, turmeric, and alfalfa sprouts. This taste creates absorption and binding of the stool because of its effect on colonic function where water reabsorption largely occurs. Astringent is anti-inflammatory, decongestant, cleansing like the bitter vibrational frequency pattern, and helps clear the tissues. In excess it can cause intestinal cramping and creates coagulation.

Psychologically in the mindbody, astringent is supportive and grounding due to the Earth’s universal energy. It causes the mindbody to be organized but in excess can produce a mindbody that is scattered, anxious, fearful, and depressed.

So there we have it- the six energetic taste patterns of sweet, sour, salty, pungent, bitter, and astringent. And we have seen how these tastes that make up the foods and drink that we consume cause us imbalance because the same vibrational frequencies that make up food and drink make up us as well.

This is the sentinal knowledge of the energy science of Ayurveda. That vibrational frequencies that make up us also make up the foods and the world that we consume. When we realize this, our whole medical paradigm changes radically.

The Cleansing Bitter Taste

The fifth taste that brings balance to Kapha and aggravates Vata is the bitter taste. It is an important taste as we will see given our acidic diet in the West. Coffee is bitter and its qualities increase mindbody movement, usually seen as psychological agitation. So coffee can hardly be cleansing in most situations.

The alkaline taste in Nature is bitter: cold, light, dry, rough, mobile, subtle, soft, and clear. It increases Vata due to all its primordial vibrational frequencies but pacifies Pitta and Kapha since bitter is the opposite of sour. Pitta is balanced due to the cold, mobile, and oily qualities. Kapha is balanced due light, dry, rough, mobile, subtle, and clear.  This taste is found in turmeric, dandelion root, aloe vera, yellow dock, fenugreek, sandalwood, neem, and coffee. Bitter makes all food taste better and is the most lacking in North American nutrition.

Since bitter is alkaline, it balances sour or inflammatory conditions in the mindbody, so it is anti-inflammatory, antipyretic, laxative, and can clear skin disorders. It stimulates firm muscles and skin. In small doses it works as a digestive tonic. Bitter is cleansing because it brings detoxifying qualities to the tissues. Because antibiotics commonly used by matter science physicians have the bitter taste, nonbacterial inflammatory conditions such as interstitial cystitis or chronic prostatitis may be transiently helped with antibiotic use.

Psychologically the mindbody becomes more introverted with this taste, which creates aversion to desires, causing us to become more self-aware and introspective. In excess bitter can cause us to become cynical, boring, isolated, and lonely.

This taste is very important because we often lack it in our foods which brings up the importance of churans which deliver all six tastes which is important for meal wholeness from a food energy view.

The above picture implies that coffee might be important in delivering the bitter taste. Although it does, it is highly Vata provoking which also affects Pitta and Kapha, hence eliminating it as a drink for anyone to consume from an energetic view.
